For the Chicken:

  • 4 boneless, skinless chicken breasts (58 oz. each)
  • Salt and pepper
  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil

For the Sauce:

  • 1 tablespoon flour
  • 1 cup low sodium chicken broth
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 (1 oz.) packet Ranch seasoning mix

To Garnish:

  • Fresh parsley, to garnish (optional)

Instructions

  1. Pound and Season the Chicken: Pound the chicken breasts to an even 1” thickness using a meat mallet and season both sides with salt and pepper.
  2. Sear the Chicken: In a skillet, melt 1 tablespoon of butter with olive oil. Sear the chicken until golden brown on each side. Set aside.
  3. Prepare the Sauce: Reduce heat, add remaining butter, stir in flour, then pour in chicken broth. Add milk, sour cream, and seasonings. Combine until smooth.
  4. Simmer the Chicken: Return chicken to the pan, spoon sauce over it, and simmer until heated through and sauce thickens slightly.
  5. Serve: Dish up the chicken, top with parsley if desired, and enjoy!
