Instructions

  1. Prepare the salmon: Cut the salmon into 4 pieces. Sprinkle each piece evenly with garlic powder, then season generously with salt and pepper. Dredge each piece in flour, coating all sides to create a light crust for searing.
  2. Sear the salmon: Heat olive oil and butter together in a skillet over medium-high heat until hot. Add the salmon pieces to the pan—if using skin-on fillets, start skin side down. Cook each side for 3-4 minutes until nicely browned, being careful not to overcook as the salmon will finish cooking in the sauce. For fillets thicker than 1 inch, sear slightly longer. Once seared, transfer salmon to a plate.
  3. Prepare the sauce base: In the same skillet, add minced garlic, chicken broth (or dry white wine), lemon juice, and Dijon mustard. Stir or whisk continuously until the mustard is fully dissolved and the mixture begins to bubble, about 1-2 minutes, to develop the flavor.
  4. Add cream: Pour the heavy cream into the skillet, mixing well to combine with the garlic broth base.
  5. Simmer salmon in sauce: Return the salmon to the skillet, spooning sauce over the pieces. Let it cook gently in the sauce for approximately 5 minutes, allowing the sauce to thicken slightly and the salmon to cook through.
