  • 2 teaspoons brown sugar
  • ½ teaspoon granulated garlic

For the Sauce:

  • 1 small sweet onion, sliced into ¼ inch-thick rounds
  • 3 garlic cloves, minced
  • 2 (13.5-ounce) cans full-fat coconut milk
  • ¼ cup chopped fresh cilantro, plus more for serving
  • ½ teaspoon lime zest
  • 2 tablespoons fresh lime juice, (from 2 limes)
  • 3 green onions, thinly sliced, plus more for serving
  • 1 tablespoon cornstarch
  • Cooked rice, for serving
  • Red pepper flakes, for serving (optional)

Instructions

  1. Season the chicken: Rub the chicken with salt, brown sugar, and granulated garlic.
  2. Brown the chicken: Sear the chicken in a skillet until browned, then set aside.
  3. Cook the onion: Sauté onion and garlic until tender.
  4. Add the sauce: Combine coconut milk, cilantro, lime zest, lime juice, green onions, salt, and brown sugar. Simmer with chicken.
