Ingredients

Scale

Protein & Dairy

  • 3 cups shredded chicken (rotisserie or cooked chicken breast)
  • 8 oz cream cheese, softened (or Greek yogurt)
  • 1 cup shredded cheddar cheese, divided

Vegetables

  • 4 cups cauliflower rice
  • 1 cup chopped spinach, broccoli florets, or sliced mushrooms

Seasonings & Oils

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s at the right temperature when you’re ready to bake the casserole.
  2. Sauté Cauliflower Rice: Heat the olive oil in a skillet over medium heat. Add the cauliflower rice and sauté for 5 to 7 minutes until it becomes tender and most of the moisture has evaporated, which helps prevent a soggy casserole.
  3. Combine Ingredients: In a large mixing bowl, combine the shredded chicken, sautéed cauliflower rice, softened cream cheese, half of the shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix until all ingredients are evenly incorporated.
  4. Add Vegetables: Fold in the chopped spinach, broccoli florets, or sliced mushrooms to add extra flavor and nutrition.
  5. Prepare Baking Dish: Grease a 9×13-inch baking dish to prevent sticking. Spread the mixed casserole evenly into the dish.
  6. Top and Bake: Sprinkle the remaining shredded cheddar cheese over the casserole. Bake uncovered in the preheated oven for 20 to 25 minutes, or until the top is bubbly and lightly golden.

Notes

  • Using rotisserie chicken saves time and adds extra flavor.
  • Feel free to swap out vegetables based on preference or seasonality.
  • To make this casserole lower in fat, substitute cream cheese with Greek yogurt.
  • Ensure cauliflower rice is cooked until moisture evaporates to avoid a watery casserole.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated.
