Linguine Pasta:

  • 8 oz linguine pasta

Chicken:

  • 2 boneless skinless chicken breasts
  • 2 tsp olive oil
  • 1 1/2 to 2 Tbsp cajun seasoning (divided)

Sauce:

  • 2 Tbsp unsalted butter
  • 3 garlic cloves, minced
  • 2/3 cup diced tomatoes
  • 1 1/2 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 2 Tbsp parsley, finely chopped (to serve)

Instructions

  1. Cook Pasta: Boil water, cook pasta until al dente, then drain and set aside.
  2. Prepare Chicken: Season and cook chicken until done. Slice and keep warm.
  3. Make Sauce: Saute butter, garlic, and tomatoes. Add cream, cajun seasoning, and parmesan. Simmer.
  4. Combine: Add chicken and pasta to sauce. Toss until warmed through.
  5. Serve: Garnish with parmesan and parsley before serving.
