For the Cajun Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Pasta:

  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. While the oil is heating, season both sides of the chicken breasts with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.

  3. Cook the chicken for 6 to 7 minutes per side until golden brown and cooked through.
  4. Rest the chicken on a cutting board.
  5. Melt butter in the skillet and sauté garlic.
  6. Add cream and broth, simmer for 3-4 minutes.
  7. Stir in Parmesan cheese until melted.
  8. Cook pasta al dente; reserve pasta water.
  9. Slice chicken into strips.
  10. Combine pasta and sauce, adding pasta water as needed.
  11. Add parsley and lemon juice, top with chicken.
  12. Toss together until heated through.
  13. Serve immediately garnished with parsley.
