  • 810 hard-boiled eggs (for 1-quart wide-mouth jar) or 8 hard-boiled eggs divided between 2 pint wide-mouth jars

Pickling Brine

  • 2 cups Apple Cider Vinegar
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 1 tsp Garlic Powder
  • 1 tsp Ground Turmeric
  • 1/2 tsp Cayenne Pepper
  • 1 cup Sliced Jalapenos

Instructions

  1. Hard-boil the eggs: Begin by hard-boiling the eggs using your preferred method; the Instant Pot method is highly recommended for perfect results. Once cooked and cooled, peel the eggs carefully.
  2. Prepare jalapenos: Slice the jalapenos into about 1/4 inch thick rings. Wear gloves to avoid irritation from the jalapeno oils, especially when handling the inner seeds and membranes. Remove the seeds if less heat is desired using a jalapeno corer.
  3. Make the pickling brine: In a saucepan, combine the apple cider vinegar, white sugar, brown sugar, garlic powder, turmeric, cayenne pepper, and sliced jalapenos. Heat the mixture until the sugars are fully dissolved and the jalapenos soften slightly.
  4. Layer eggs and jalapenos: Place the peeled hard-boiled eggs into your jar(s). Use a slotted spoon to layer the softened jalapenos evenly between and around the eggs.
  5. Pour the brine: Carefully pour the hot brine over the eggs and jalapenos in the jar, filling up to about 1/4 inch from the top to maintain proper headspace.
  6. Initial resting: Let the jar sit uncovered at room temperature for 30 minutes before sealing with the lid. This helps release pressure and allows flavors to start melding.
  7. Cool and refrigerate: Once cooled to room temperature, seal the jar tightly and place it in the refrigerator to pickle.
  8. Storage and shelf life: The pickled eggs develop best flavor after at least 24 hours and will keep well refrigerated for 3 to 4 months.
