These Cottage Cheese Egg Bites are a protein-packed, delicious breakfast option perfect for busy mornings. Made with a blend of eggs, creamy cottage cheese, and flavorful seasonings, plus your choice of fresh vegetables and meats, they bake into light, fluffy bites that are easy to prepare ahead and reheat throughout the week.

Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • 1 cup cottage cheese (0% – 2% fat recommended)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Cheese and Mix-ins

  • ½ cup shredded cheese (cheddar or feta)
  • Optional mix-ins (up to 1 cup total): chopped fresh spinach, diced bell peppers, broccoli florets, cooked sausage, diced ham

Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C) and grease a silicone muffin tray lightly to prevent sticking.
  2. Blend the Base: In a blender, combine the 8 large eggs, 1 cup cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until the mixture is smooth and uniform.
  3. Fill the Cups: Pour about ¼ cup of the blended egg mixture into each cavity of the prepared muffin tray.
  4. Customize the Flavor: Add your optional mix-ins such as chopped spinach, bell peppers, broccoli, cooked sausage, or ham into each muffin cup. Then, sprinkle the shredded cheddar or feta cheese on top and gently stir to combine flavors. Optionally, top with a little extra cheese for a golden finish.
  5. Bake to Perfection: Place the muffin tray in the preheated oven and bake the bites for 18-22 minutes, or until the centers are just set and no longer runny. Remove from oven and allow to cool slightly before gently removing the egg bites from the tray for serving or storage.

Notes

  • Use 0% to 2% fat cottage cheese for a creamy yet light texture; full-fat versions may be richer.
  • Feel free to mix and match vegetables and meats but keep the total add-ins to about 1 cup to ensure proper cooking.
  • To make the egg bites ahead, store them in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
  • Reheat gently in a microwave or oven before serving for the best texture.
  • Silicone muffin trays work best for easy removal, but well-greased metal muffin tins can be used as well.
