Instructions

  1. Prep: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Mix Base: In a large bowl, whisk the 6 large eggs until they are well combined. Stir in the 2 cups of cottage cheese until fully incorporated.
  3. Add Vegetables: Add the chopped spinach, diced bell pepper, chopped onion to the egg and cottage cheese mixture. Sprinkle in the garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly distributed.
