Ingredients
- 2 boxes of family size Kellogg’s Corn Pops
- 1/2 cup corn syrup
- 1 cup salted butter (2 sticks)
- 2 cups brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Preheat Oven: Preheat your oven to 250°F (120°C) to prepare for baking the coated cereal.
- Prepare Cereal: Pour the 2 boxes of Kellogg’s Corn Pops into a large baking pan and set it aside while you prepare the caramel mixture.
- Make Caramel Sauce: In a saucepan over medium-low heat, combine 1/2 cup corn syrup, 1 cup salted butter, and 2 cups brown sugar. Stir quickly then leave to gently boil without stirring. When the mixture reaches a boil, set a timer for 3 minutes and let it boil gently without stirring.
- Add Flavor and Reaction: Remove the saucepan from heat. Stir in 1 teaspoon vanilla extract and 1/2 teaspoon baking soda. Stir the mixture until it lightens in color, indicating it is ready.
- Combine Cereal and Caramel: Carefully pour the hot caramel mixture over the Corn Pops in the baking pan. Quickly but gently mix to ensure all cereal pieces are evenly coated without breaking them.
- Bake and Stir: Place the pan in the preheated oven and bake for 1 hour at 250°F, stirring every 15 minutes using a wooden spoon to prevent clumping but maintaining the integrity of the cereal pieces.
- Cool and Serve: Once baking is complete, remove from oven and let the Corn Pop Crack cool completely before serving. Enjoy as a sweet crunchy snack!
Notes
- Stir the caramel mixture gently and only when instructed to prevent crystallization.
- Be careful when pouring the hot caramel over the cereal to avoid burns.
- Use a wooden spoon to stir during baking to prevent breaking the cereal.
- Store the cooled Corn Pop Crack in an airtight container to maintain crunchiness.
