  • 15 oz mini marshmallows (1 ½ 10 oz bags, reserve 1 cup of marshmallows)

  • 9 cups Rice Krispies cereal

Instructions

  1. Prepare the pan: Butter a 9 x 13 x 2 inch baking pan or line it with parchment paper to prevent sticking and make removal easier.
  2. Melt butter and marshmallows: In a large saucepan over low heat, melt the butter. Once melted, add all but 1 cup of the mini marshmallows and stir continuously until the marshmallows are completely melted and smooth. Remove the pan from heat immediately to avoid burning.
  3. Add vanilla and cereal: Stir in the vanilla extract to the melted mixture. Then add the Rice Krispies cereal along with the reserved 1 cup of marshmallows. Gently fold them in to coat all the cereal evenly without crushing it.
  4. Transfer and shape: Pour the coated cereal mixture into the prepared pan. Using a buttered spatula, waxed paper, or your fingers dipped in water or butter, gently press the mixture into an even, compact but not overly packed layer. Avoid pressing too hard to keep the treats light and chewy.
  5. Cool and serve: Let the treats cool at room temperature for at least one hour to set properly before slicing into squares and serving.

Notes

  • Do not pack the cereal tightly to ensure the treats remain soft rather than hard.
  • For easier removal, lining the pan with parchment paper is recommended.
