Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when your batter is mixed.
  2. Mix Wet Ingredients: In a large mixing bowl, mash the overripe bananas thoroughly. Add the melted vegan butter, maple syrup, almond or oat milk, and vanilla extract. Stir until the mixture is smooth and well combined.
  3. Prepare Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, light brown sugar, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until just incorporated to avoid overmixing.
  4. Make the Cinnamon Swirl: In a small bowl, combine 2 tablespoons of melted vegan butter with the light brown sugar and cinnamon. Mix well to create the cinnamon swirl mixture.
  5. Assemble the Bread: Grease a loaf pan lightly. Pour half of the batter into the pan, spreading it out evenly. Drizzle half of the cinnamon swirl mixture over the batter.
