Ingredients

Scale

For the Crust:

  • 1 box (15.25 oz) yellow cake mix
  • 1 large egg
  • 1 stick (8 tablespoons) salted butter, melted

For the Filling:

  • 1 package (8 ounces) cream cheese, room temperature
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 box (16 ounces) powdered sugar
  • 1 stick (8 tablespoons) salted butter, melted
  • 1 package (12 ounces) semi-sweet chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and position the rack in the center for even baking.
  2. Prepare Baking Dish: Lightly butter or spray a 9″x13″ casserole dish or baking pan to prevent sticking.
  3. Make the Crust Batter: In a mixing bowl, combine the yellow cake mix with one large egg and melted butter. Mix thoroughly using an electric hand mixer until it forms a pliable batter resembling loose Play-Doh.
  4. Press Crust into Pan: Scrape the batter into your prepared baking dish and evenly press it down using clean hands. Set the batter aside and keep the beaters for the next step.
  5. Beat Cream Cheese: Using the same mixing bowl, beat the room temperature cream cheese until it becomes light and fluffy.
  6. Add Eggs and Vanilla: Beat in two large eggs and one teaspoon of pure vanilla extract until fully combined.
  7. Add Powdered Sugar: Slowly add the powdered sugar at low to medium-low mixer speed to ensure even incorporation without a mess.
  8. Mix in Melted Butter: Gradually mix in the melted butter (one stick) into the filling until smooth and creamy.
  9. Add Chocolate Chips: Fold in the semi-sweet chocolate chips evenly throughout the filling mixture.
  10. Assemble: Pour the rich filling mixture on top of the crust and spread it evenly with a spatula.
  11. Bake: Bake for 40 to 45 minutes at 350°F. The bars should still have a slight jiggle indicating gooey center.
  12. Cool: Remove from the oven and cool completely for at least 2 hours before cutting into squares to allow filling to set perfectly.

Notes

  • Using room temperature cream cheese is essential for a smooth filling texture.
  • Press the crust evenly to ensure uniform thickness and baking.
  • Keep an eye on baking time as ovens differ; the filling should be slightly jiggly when done.
  • Allow sufficient cooling time to prevent the bars from falling apart when cut.
  • For extra gooey texture, slightly underbake by a few minutes if desired.
