Ingredients You’ll Need

Gathering what you need for Chili Mac couldn’t be more straightforward, and each ingredient plays a starring role in building those rich, hearty flavors and creamy textures. Here’s everything you’ll need, plus a few tricks to get the best out of every bite.

  • Ground Beef: The foundation of the chili, 80% lean gives you the ideal balance of richness without being greasy.
  • Onion: Adds sweetness and depth that rounds out the savoriness of the beef.
  • Bell Pepper: Brings color and a gentle crunch—go for red or green for extra vibrance.
  • Garlic: A must for aroma and pop; freshly diced works best.
  • Chili Seasoning Mix: Use your favorite packet or a homemade blend for signature chili flavor—it’s the magic touch!
  • Tomato Paste: Thickens the chili and intensifies that tomato goodness.
  • Tomato Sauce: Creates a luscious, savory base everyone will love.
  • Diced Tomatoes: Provide juicy bursts and keep the chili tasty and moist.
  • Chicken Broth: Adds body and balances the flavors; beef broth works for extra oomph.
  • Kidney Beans: Hearty, creamy, and classic—don’t skip these!
  • Macaroni: The star of the “Mac”—elbow shapes are best for catching all that saucy good stuff.
  • Butter: For a rich, classic mac and cheese sauce base.
  • Flour: Helps create a perfectly thick, velvety cheese sauce.
  • Heavy Cream: Lends lusciousness and makes the cheese sauce extra dreamy.
  • Milk: Keeps everything smooth and balanced in the cheese sauce.
  • Mustard Powder: Adds subtle zing that makes the cheese pop.
  • Onion Powder: Enhances the savory notes of the sauce.
  • Salt & Pepper: Simple, essential seasoning—taste and adjust as you go!
  • Hot Sauce: For a gentle kick; adjust to your family’s preference.
  • Cheddar Cheese: Sharp cheddar, freshly shredded, melts into creamy bliss—don’t skimp on quality here!
  • Fresh Parsley: A sprinkle for brightness and a pop of green at serving time.

How to Make Chili Mac

Step 1: Sauté Beef and Vegetables

Start by reaching for your largest heavy-bottomed pot. Cook and crumble the ground beef over medium-high heat for a couple of minutes, then stir in the diced onions. Continue to cook until the beef is nicely browned and the onions are meltingly soft—about five minutes. Drain off any excess grease to keep your Chili Mac perfectly hearty, not heavy.

Step 2: Build the Chili Base

To your sizzling beef, add the bell pepper and garlic, allowing them to soften and release their aroma for about four minutes. Stir in the chili seasoning and tomato paste, letting everything cook for a minute to unlock a layer of deep, savory flavor.

Step 3: Simmer the Chili

Pour in the tomato sauce, undrained diced tomatoes, and chicken broth, stirring to combine. Once it comes to a gentle boil, drop the heat and let it simmer uncovered—just enough for the sauce to thicken and the flavors to meld. Add the drained kidney beans during the last ten minutes so they stay sturdy and satisfying.

Step 4: Boil the Macaroni

While the chili simmers and fills your kitchen with tantalizing aromas, bring a large pot of salted water to a boil. Add the macaroni and cook until just al dente, being careful not to overcook since noodles will absorb more sauce later. Drain the pasta thoroughly once it’s ready.

Step 5: Make the Cheese Sauce

In a Dutch oven or big soup pot, melt the butter over medium heat until it’s foaming. Whisk in the flour, stirring for a couple of minutes to work out any raw flour flavor. Slowly add the heavy cream in splashes, whisking all the while, then do the same with the milk. Let it reach a boil before reducing to a simmer, then stir in the mustard powder, onion powder, hot sauce, salt, and pepper for that signature cheesy tang.

Step 6: Combine Macaroni and Cheese Sauce

Gradually sprinkle in the shredded cheddar, stirring until it’s gloriously melted and smooth. Add the drained macaroni and gently toss to ensure every nook and cranny is coated. If you like things super cheesy, you can use a little less pasta—or go full comfort and add it all!

Step 7: Mix Chili and Mac

Time for the best part! Gently fold the chili into your macaroni and cheese using a silicone spatula. You’re in charge of the ratio—add as much chili as you love (or save some chili for another meal). Give it a good mix so each scoop has that glorious swirl of both chili and creamy mac.

Step 8: Bake and Finish

Transfer the mixture into a baking dish, sprinkle with the remaining cheddar cheese, and slide it into a 400°F oven. Bake for just five minutes, or until that cheese layer is positively melty and gooey. Finish with a generous dusting of fresh parsley for color and freshness, then call everyone to the table!

How to Serve Chili Mac

Garnishes

Top your Chili Mac with a handful of freshly chopped parsley for a fresh herbal note, or try sliced green onions, a dollop of sour cream, or even a scattering of crispy tortilla strips. Everyone loves a personal touch on their serving—let your creativity shine!

Side Dishes

Bread is always a winner; think warm, crusty garlic bread, or buttery cornbread muffins. For contrast, add a simple green salad with a zesty vinaigrette or crisp steamed veggies. These sides balance the richness of Chili Mac and make the meal feel complete.

Creative Ways to Present

Individual ramekins make charming, portioned servings—perfect for dinner parties or potlucks. For a fun twist, scoop Chili Mac into baked bell pepper halves or hollowed-out bread bowls for edible “dishes.” Sprinkle different cheeses or add jalapeños before baking for a flavor surprise in every bite!

Make Ahead and Storage

Storing Leftovers

Stash any leftover Chili Mac in an airtight container and refrigerate for up to four days. The flavors get even richer as they mingle overnight, making this the meal that keeps on giving. Be sure to cool completely before sealing to avoid condensation.

Freezing

Yes, Chili Mac freezes beautifully! Cool completely, then portion into freezer-safe containers. It will hold in the freezer for up to two months. To prevent any mushiness, undercook the macaroni slightly if you’re planning to freeze it.

Reheating

For best results, reheat Chili Mac gently in the oven at 350°F, covered with foil to keep moisture in. On the stovetop, add a tablespoon or two of water or milk and reheat over low, stirring often. The microwave works too—just use short bursts, stirring in between, to keep the cheese sauce ultra creamy.

FAQs

Can I make Chili Mac vegetarian?

Absolutely! Swap the ground beef for plant-based crumbles or black beans, and use veggie broth instead of chicken or beef. The result is a just-as-satisfying, flavor-packed meatless Chili Mac everyone can enjoy.

Can I use different types of cheese?

You bet—while sharp cheddar is traditional, feel free to blend in Monterey Jack, Colby, or even pepper jack for extra flair. Just be sure to use cheese that melts smoothly for that signature creamy sauce.

Is Chili Mac spicy?

It has a gentle heat from the chili seasoning and hot sauce, but you can dial it up or down to suit your tastes. Cut back on hot sauce for a milder dish, or add jalapeños, chipotle powder, or extra chili flakes if you like a bolder kick!

Can I prepare Chili Mac ahead of time?

Yes! Assemble everything up to the point of baking, then cover and refrigerate for up to 24 hours. When ready to serve, simply pop it in the oven and bake until hot and bubbly.

What pasta shapes work best?

Classic elbow macaroni is a must for that nostalgic feel, but small shells or rotini will also work well. The key is to choose a pasta that holds plenty of cheese and chili in every forkful!

Final Thoughts

I truly hope you give Chili Mac a spot on your dinner table soon. With its unbeatable blend of creamy, cheesy comfort and savory, beefy chili, it’s sure to become one of your most-requested family favorites. Don’t be surprised if you end up making a double batch—leftovers are just as dreamy the next day!

  • 2 cups macaroni, uncooked
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon each: salt/pepper
  • ½ teaspoon hot sauce
  • 1 ½ cups cheddar cheese, shredded

For Baking

  • 1 ½ cups cheddar cheese, shredded
  • Fresh Parsley, to garnish

Instructions

  1. Make the Chili Cook and crumble the ground beef in a large pot over medium-high heat for 2 minutes. Add the onions and cook for 5 more minutes, or until the beef is brown and the onions are softened. Drain grease.
  2. Add the bell peppers and the garlic and cook until the peppers are softened, about 4 minutes. Add the seasoning and tomato paste and stir to combine. Cook for 1 minute.
  3. Add the tomato sauce, undrained diced tomatoes, and chicken broth. Stir to combine. Bring to a boil, then reduce so that it’s bubbling gently. Cover partially and let it simmer while you prepare the macaroni and cheese. The longer it simmers, the thicker and more concentrated it will get. Add the drained kidney beans during the last 10 minutes or so.
  4. Make the Mac and Cheese Preheat oven to 400° F. Begin boiling salted pasta water for the macaroni. Proceed with preparing the cheese sauce while it comes up to a boil. Once boiling, add the macaroni and cook according to package instructions, until just al dente. (Don’t overcook it.) Drain once cooked.
  5. Melt the butter in a 4 ½ quart Dutch oven or large soup pot over medium heat and wait for it to begin to foam slightly. Whisk in the flour and stir continuously for 2 minutes. Add the heavy cream in splashes, stirring continuously. Add the milk in the same manner.
  6. Bring to a boil, then reduce to a simmer. Add the hot sauce and seasonings and stir to combine. Reduce heat to low.
  7. Gradually sprinkle in the shredded cheese, stirring continuously, until well-combined and smooth.
  8. Add the drained macaroni and stir to combine. (For extra cheesy macaroni, add slightly less pasta as the noodles will continue to absorb the cheese sauce. My images show it with the full amount being added.)
  9. Combine the Chili & Macaroni Add the chili to the macaroni and use a silicone spatula to gently stir to combine. You may choose to add all of it, (as shown in the images), or some of it, the ratio of mac and cheese to chili is up to you! You can always freeze any excess chili.
  10. Bake Once combined, top with 1 ½ cups cheddar cheese and bake uncovered for 5 minutes, or until the cheese is melted. Garnish with parsley if desired and serve!

Notes

  • You can customize the level of spiciness by adjusting the amount of chili seasoning and hot sauce.
  • Feel free to add your favorite toppings such as sour cream, sliced jalapeños, or diced avocado.
  • This dish can be made ahead of time and reheated in the oven for a quick and easy meal.
