For the Chicken:
- 1 ½ lbs boneless skinless chicken breasts or chicken thighs, cut into bite-size pieces
- 1 1/2 tablespoons all-purpose flour
- 1 tablespoon Hungarian sweet paprika
- 4 tablespoons unsalted butter, divided
For the Sauce:
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- Kosher salt and fresh ground black pepper, to taste
- 3 tablespoons all-purpose flour
- 1 tablespoon sweet paprika
- 3/4 cup full-fat sour cream
- 1 tablespoon chopped fresh parsley
- Prepare the Chicken: In a bowl, coat the chicken pieces with 1 1/2 tablespoons flour and 1 tablespoon sweet paprika.
- Cook the Chicken: Melt 2 tablespoons butter in a skillet over medium heat. Cook the chicken until golden brown and cooked through. Remove to a plate.
- Make the Sauce: Melt remaining butter, add onions, cook until soft. Add garlic, then sprinkle in remaining flour and paprika. Slowly stir in chicken broth. Simmer until thickened. Season with salt and pepper.
- Finish the Dish: Reduce heat, stir in sour cream. Add chicken back to skillet. Garnish with parsley.
