For the Chicken Fried Rice:

  • 2 tablespoons sesame oil or vegetable oil
  • ½ cup onion, diced
  • ½ cup carrots, diced
  • ½ cup frozen peas, no need to thaw
  • 2 eggs
  • 3 cups cooked white rice
  • 2 cups cooked chicken, shredded
  • 3 tbsp soy sauce
  • 1 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. Heat the Pan: Heat a large frying pan or wok over medium heat. Add sesame oil, onions, and carrots; sauté until tender.
  2. Add Peas: Add peas to the pan and stir well.
  3. Scramble Eggs: Beat eggs, push vegetables to the side, pour eggs, scramble, and mix.
  4. Combine Ingredients: Add rice and chicken, mix well.
  5. Season: Add soy sauce, stir into the fried rice. Add butter, stir until melted. Season with salt and pepper.
  6. Serve: Serve hot with ‘yum-yum sauce’.
