A comforting and flavorful Chicken Broccoli Rice Casserole that’s perfect for a family dinner. This easy one-pot dish is packed with tender chicken, fresh broccoli, creamy sauce, and cheesy goodness, all baked to perfection with a crispy cracker topping.

For the Casserole:

  • 2 Tablespoons butter
  • 2 boneless skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 1 teaspoon Italian Seasoning
  • Salt/Pepper (to taste)
  • 2 1/2 cups chicken broth
  • 1 Tablespoon olive oil
  • 1 1/4 cups white long grain rice (uncooked)
  • 23 cups fresh broccoli florets (uncooked)
  • 10.5 oz. Condensed Cream of Chicken Soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese (separated)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder

For the Topping:

  • 1 cup Ritz crackers (crushed)
  • 2 Tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F. Cut chicken into bite-sized pieces and season with Italian seasoning, salt, and pepper. Cook in butter until golden brown, then set aside.
  2. In the same pot, add chicken broth, olive oil, and rice, bringing to a boil. Simmer covered for 6 minutes.
  3. Add broccoli, cover, and cook for 9 more minutes until rice is tender.
  4. Let rice stand covered for 10 minutes off heat.
  5. Stir in cooked chicken, cream of chicken soup, milk, sour cream, seasonings, and half of the cheese.
  6. Transfer to casserole dish, top with remaining cheese, and bake covered for 15 minutes.
  7. For the topping, combine crushed crackers with melted butter and sprinkle over casserole. Bake uncovered for 10 more minutes.
  8. Rest for 5 minutes before serving.
