Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Condiments

  • 4 slices of bread (sourdough, ciabatta, or choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 6 to 7 minutes per side, or until fully cooked and no longer pink inside. Remove from the skillet and let the chicken rest for a few minutes before slicing thinly.
  2. Prep the Avocado and Cheese: Slice the avocado and have the cheese slices ready for assembling the sandwiches.
  3. Prepare the Bread: Spread mayonnaise and Dijon mustard evenly on one side of each bread slice to add flavor and moisture to the sandwich.
  4. Assemble the Sandwiches: On two slices of bread with mayo side up, layer sliced chicken, avocado, cheese, thinly sliced red onion, and tomato. Top each with the remaining bread slices, mayo side down, to complete the sandwich.
  5. Grill the Sandwiches: Heat butter or olive oil in a skillet over medium heat. Place the sandwiches in the skillet and cook for 3 to 4 minutes per side, pressing gently with a spatula to flatten slightly, until the bread is golden brown and the cheese is melted.
  6. Serve: Remove the sandwiches from the skillet. Allow them to cool slightly, then slice in half and serve warm for the best taste and texture.

Notes

  • Use ripe but firm avocado to avoid a mushy texture.
  • For a spicier kick, add a few slices of jalapeño or a dash of hot sauce.
  • You can substitute chicken breasts with turkey cutlets or grilled tofu for variation.
  • Butter provides a richer flavor for grilling, while olive oil offers a lighter option.
  • Make sure not to overcrowd the pan when grilling to ensure even toasting.
