Chicken and Rice
- 2 cups cooked jasmine or basmati rice
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil (for cooking)

Dressing

- Juice of 1 lime
- 1 tsp olive oil

- Season the Chicken: Sprinkle the chicken breasts evenly with paprika, salt, and black pepper to ensure they are well flavored.
- Cook the Chicken: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken breasts for 5 to 6 minutes on each side until fully cooked and no longer pink inside. Remove and let rest before cubing the meat.
