Chia Seed Pudding
- 1/2 cup chia seeds (black or white)
- 2 cups almond milk (or milk of choice – dairy, oat, soy, or light coconut milk)
- 2 Tbsp maple syrup (or honey, or your desired sweetener, adjust to taste)
- Combine: In a large mason jar or a sizeable measuring cup, blend together the almond milk and maple syrup until well mixed. Add the chia seeds into the liquid and whisk thoroughly to ensure all seeds are evenly moistened and not clumped.
- Re-whisk: Allow the mixture to rest for 10-15 minutes, then whisk again to break up any seed clumps, ensuring smooth consistency throughout.
- Refrigerate: Once the chia seeds stay mostly suspended and evenly distributed in the milk, cover the container and refrigerate for at least 4 hours, preferably overnight, to allow the pudding to thicken properly.
- Serve: After chilling, serve the pudding cold in individual mason jars or bowls. Garnish with your favorite toppings such as fresh fruit, nuts, or granola as desired. Each serving is approximately 3/4 cup.
Notes
- Use any type of milk you prefer, including dairy or plant-based alternatives like oat, soy, or coconut milk, to suit dietary needs.
- Maple syrup sweetness can be adjusted or substituted with honey or other natural sweeteners according to taste.
- Whisking after resting prevents chia seeds from clumping together, ensuring smooth pudding texture.
- Refrigerating overnight produces the best pudding consistency as seeds fully absorb liquid.
- Store leftovers covered in the refrigerator for up to 3 days.
