  • 1 3/4 cup dark brown sugar
  • 1 teaspoon molasses
  • 1 large egg plus 1 large yolk
  • 2 teaspoons pure vanilla extract

For Rolling:

  • 1/2 cup granulated sugar

Instructions

  1. Preheat and Prepare: Adjust an oven rack to the middle position and preheat the oven to 350F (180C). Line three sheet pans with parchment paper.
  2. Combine Dry Ingredients: In a medium bowl, mix the flour, baking soda, and salt.
  3. Prepare Wet Ingredients: In the bowl of a stand mixer, beat butter until creamy. Add brown sugar and molasses, beat until light and fluffy. Add egg, yolk, and vanilla, beat until combined. Add flour mixture and mix until just combined.
  4. Roll the Cookies: Place granulated sugar in a bowl. Shape dough into balls, roll in sugar, and place on sheet pans.
  5. Bake: Bake one pan at a time for 10-11 minutes until set. Cool on pan for 5-10 minutes, then transfer to a wire rack to cool completely.
  6. Storage: Store cookies in an airtight container at room temperature for up to 3 days.
