  • 4 cups pitted tart red cherries
  • 1 cup white sugar
  • 1/4 cup cornstarch

Instructions

  1. Gather the ingredients. Prepare all the necessary ingredients as listed.
  2. Cook the cherries. In a saucepan over medium heat, cook the cherries until they release their juices and come to a simmer, stirring often, for about 10 to 15 minutes.
  3. Prepare the sugar-cornstarch mixture. In a bowl, whisk together the sugar and cornstarch until well combined. Pour this mixture into the hot cherries and juice, stirring until fully mixed.
  4. Thicken the filling. Simmer the mixture over low heat until it thickens, approximately 2 minutes. Remove from heat and allow it to cool before using as a pie filling.
