Ingredients

Scale

Vegetables & Dairy

  • 3 tablespoons butter
  • 1 cup yellow onion (diced into 1/2″ pieces)
  • 20 ounces frozen shredded potatoes
  • 1 cup sour cream
  • 2 cups shredded cheese (divided)

Canned Goods & Broth

  • 1 10-ounce can cream of mushroom soup
  • 1 cup chicken broth

Seasonings

  • 2 teaspoons garlic salt

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it reaches the perfect temperature for baking the casserole.
  2. Prepare Baking Dish: Spray the inside of a 9″ x 13″ baking dish thoroughly with nonstick cooking spray to prevent sticking and make cleanup easier.
  3. Cook Onions: In a skillet over medium heat, melt the butter. Add the diced onions and cook, stirring frequently, until they are lightly caramelized and fragrant, which should take about 5 minutes. Once done, set the skillet aside.
  4. Mix Casserole Ingredients: In a large mixing bowl, combine the frozen shredded potatoes, cream of mushroom soup, sour cream, 1½ cups of shredded cheese, cooked onions, garlic salt, and chicken broth. Stir until all ingredients are well incorporated.
  5. Assemble Casserole: Spread the potato mixture evenly into the prepared baking dish. Then sprinkle the remaining ½ cup of shredded cheese evenly over the top to create a cheesy crust as it bakes.
  6. Bake: Place the baking dish in the preheated oven and bake uncovered for 30 to 40 minutes. The casserole is ready when the edges are bubbly and the top is lightly golden brown.
  7. Serve: Remove from the oven and let it cool slightly before serving. Enjoy your warm, cheesy potato casserole!

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Using freshly shredded potatoes can be an alternative to frozen, but ensure they are well-drained to avoid excess moisture.
  • Feel free to add cooked bacon or ham for extra protein and flavor if desired.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • To make it gluten-free, ensure the cream of mushroom soup is gluten-free or use a homemade version.
