Cheesy Mashed Potato Puffs:

  • Cooking spray
  • 2 cups cold mashed potatoes
  • 3 large eggs
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded white Vermont cheddar cheese
  • 2 green onions, chopped
  • 1 teaspoon dried chives
  • 2 slices bacon, cooked and crumbled
  • 1/2 tablespoon grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

For serving:

  • Sour Cream (for dipping)

Instructions

  1. Preheat the oven: Preheat the oven to 375 degrees F (190 degrees C). Spray a standard muffin tin liberally with cooking spray.
  2. Prepare the mixture: In a bowl, combine mashed potatoes, cheddar cheeses, eggs, green onions, salt, pepper, dried chives, Parmesan cheese, and bacon.
  3. Fill the muffin cups: Divide the mixture into 12 muffin cups, sprinkle the reserved cheese on top.
  4. Bake: Bake for about 15 minutes until golden brown. Let them cool for 5 minutes.
