Fritter Ingredients

  • 1 1/2 lbs chicken breasts (approximately 3 large breasts), diced into 1/3″ pieces
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour (or cornstarch or potato starch for gluten free)
  • 4 oz mozzarella cheese (about 1 1/3 cups shredded)
  • 1 1/2 Tbsp chopped fresh dill
  • 1/2 tsp salt (or to taste)
  • 1/8 tsp black pepper
  • 2 Tbsp extra light olive oil (or any high heat cooking oil for sautéing)

Garlic Aioli

  • 1/3 cup mayonnaise
  • 1 garlic clove, pressed
  • 1/2 Tbsp lemon juice
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Prepare the Chicken: Using a sharp knife, dice the chicken breasts into 1/3″ thick pieces. To make slicing easier, partially freeze the chicken beforehand. Place the diced chicken into a large mixing bowl.
  2. Make the Batter: Add to the chicken the eggs, 1/3 cup mayonnaise, flour, shredded mozzarella, chopped dill, salt, and black pepper. Stir everything together until the mixture is well combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best flavor meld.
  3. Cook the Fritters: Heat a large non-stick pan over medium heat and add 2 tablespoons of extra light olive oil. When the oil is hot, drop the chicken mixture by heaping tablespoons into the pan. Slightly flatten the tops with the back of the spoon. Sauté each fritter uncovered for 3-4 minutes on the first side until golden brown, then flip and cook for an additional 3 minutes on the other side, or until the fritters are cooked through and golden. Repeat with the remaining batter, adding more oil as needed.
  4. Prepare the Garlic Aioli: In a small bowl or measuring cup, combine 1/3 cup mayonnaise, pressed garlic clove, lemon juice, salt, and pepper. Stir together until smooth and creamy. Serve alongside the warm fritters for dipping.
