Ingredients

Scale

Fritter Mixture

  • 1 1/2 lb (700g) skinless, boneless chicken breast, finely diced
  • 2 medium eggs
  • 1/3 cup almond flour or coconut flour
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese (optional)
  • 3 Jalapeño peppers, seeded and finely diced
  • 1 spring onion, sliced (plus extra for garnish)
  • 2 tablespoons parsley, chopped
  • 1/2 teaspoon garlic powder
  • A pinch of salt and fresh ground black pepper

For Frying

  • 1 tablespoon olive oil

Instructions

  1. Prepare the fritter mixture: In a large bowl, combine the finely diced chicken breast, almond or coconut flour, eggs, shredded mozzarella, grated parmesan (if using), sliced spring onion, diced jalapeños, chopped parsley, garlic powder, salt, and black pepper. Mix everything thoroughly until well incorporated.
  2. Heat the pan and shape fritters: Heat 1 tablespoon of olive oil in a large non-stick pan over medium-low heat. Using an ice cream scoop or large spoon, scoop portions of the chicken mixture and place them into the pan. Slightly flatten each scoop to form fritters. Ensure not to overcrowd the pan; cook in batches for even cooking.
  3. Fry until golden and cooked through: Cook the fritters for about 6-8 minutes, flipping them carefully to brown both sides evenly. Maintain medium-low heat to prevent burning the exterior while ensuring the chicken cooks thoroughly inside.
  4. Garnish and serve: Once cooked, transfer the fritters to a serving plate. Garnish with additional sliced spring onion and serve immediately with your preferred dip such as mayonnaise, chipotle aioli, Sriracha, or ketchup. Enjoy warm!

Notes

  • Use almond flour for a low-carb option or coconut flour for a slightly different texture.
  • Make sure to seed the jalapeños to control the heat level; leave some seeds in if you prefer spicier fritters.
  • Cook over medium-low heat to ensure the chicken cooks thoroughly without burning the exterior.
  • Fritters can be kept warm in a low oven (around 200°F/90°C) if cooking in batches.
  • These fritters are great for meal prep and can be reheated in a skillet or air fryer for crispiness.
