  • 3 tbsp olive oil

Instructions

  1. Prepare the filling: Preheat the oven to 160°C (320°F) and line a baking tray with parchment paper. Place the shallots, coriander, and 1 teaspoon of olive oil into a food processor and blitz until finely chopped. Transfer this mixture to a bowl and combine with the minced beef, paprika, salt, and black pepper to taste. Mix well to evenly distribute the seasonings.
  2. Assemble the parcels: Lay one filo sheet on a clean surface and drizzle with 1 teaspoon of olive oil. Brush the oil evenly over the sheet, then crinkle the sheet into an accordion fold along the long side. Fold this accordion-folded sheet in half so the edges meet and slightly overlap, creating a sturdy base. Spoon about 1 tablespoon of the beef mixture along the far edge of the folded filo and sprinkle with a little grated mozzarella. Fold the sides inward to enclose the filling, then roll the pastry towards you tightly. Flip the rolled parcel so that the crinkled side is on top, ensuring a crispy texture after baking. Repeat this process with the remaining filo sheets and filling.
  3. Bake the parcels: Arrange the assembled parcels on the prepared baking tray. Brush or spray the remaining olive oil over the parcels to help them achieve a golden, crisp finish. Bake in the preheated oven for 25 to 30 minutes until the parcels are golden brown and crisp. Remove from the oven and allow to cool slightly before serving.
