Patty Mixture
- 680 g beef mince (20% fat)
- 1 small onion, finely grated
- 2 garlic cloves, minced
- 60 g breadcrumbs
- 1 large egg
- 2 tablespoons milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon mustard
- 1 teaspoon Italian herb blend
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
Finishing
- 170 g cheese (mozzarella or cheddar), cut into 10-12 cubes
- 120 g grated cheese (mozzarella or cheddar)
- 2 tablespoons olive oil
- Handful fresh parsley or chives, chopped (optional)
- Preheat Oven: Heat your oven to 200°C (400°F). Line a baking tray with parchment paper and brush it lightly with olive oil to prevent sticking.
- Mix Ingredients: In a large bowl, combine all the patty mixture ingredients except the cheese cubes. Use your hands to mix gently until just combined, being careful not to overmix which could make the patties tough.
- Shape Patties: Divide the mixture into 10-12 equal portions. Flatten each portion in your palm, place a cube of cheese in the center, then wrap the meat fully around the cheese, shaping it into a patty about 1.5 cm thick.
- Arrange & Oil: Place the patties on the prepared baking tray, leaving space between each one. Brush the tops with olive oil to help them crisp up during baking.
- Bake Initial: Bake the patties in the preheated oven for 12-14 minutes until they begin to cook through.
- Add Grated Cheese: Remove the tray from the oven and sprinkle the grated cheese evenly over each patty.
- Bake Again: Return the patties to the oven and bake for an additional 5-8 minutes until the cheese on top melts, bubbles, and the patties are fully cooked to an internal temperature of 71°C (160°F).
- Rest & Serve: Let the patties rest for 3 minutes after baking. Optionally, sprinkle with chopped fresh parsley or chives, then serve hot.
