  • 8 cups romaine (chopped)
  • 4 large dill pickles (sliced thin)
  • 2 medium tomatoes (diced small)
  • 1/2 white or red onion (sliced thin)
  • 1/2 cup pickled and sliced banana peppers
  • 1 cup sharp cheddar cheese (grated)

Fries

  • 1 1/3 cups frozen french fries
  • 2 tsp olive oil (or cooking spray)

Ground Beef

  • 1 lb lean ground beef
  • salt and pepper (to taste)

Mustard Vinaigrette

  • 1/4 cup mayonnaise
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp dijon mustard
  • 1 Tbsp honey
  • 1/2 tsp paprika
  • 1 clove garlic (minced)
  • 3/4 tsp salt
  • black pepper (to taste)

Instructions

  1. Prepare Vegetables and Cheese: Chop the romaine lettuce, thinly slice the dill pickles and onion, dice the tomatoes small, and slice the pickled banana peppers. Grate the sharp cheddar cheese and set all aside to use later.
  2. Make the Mustard Vinaigrette: In a small bowl or jar, combine mayonnaise, apple cider vinegar, dijon mustard, honey, paprika, minced garlic, salt, and black pepper. Whisk gently until the dressing is smooth and well combined. Set aside.
  3. Cook the French Fries: Cook the frozen french fries according to the package instructions until crispy and golden brown. You can toss them with a little olive oil or cooking spray before baking for extra crispiness. Once cooked, set aside.
  4. Cook the Ground Beef: Heat a large skillet over medium heat, add olive oil or cooking spray, and then the ground beef. Break the beef into small, uniform crumbles using a spatula or wooden spoon while cooking. Continue until no pink remains and some crumbles have browned nicely. Season with salt and pepper to taste. Remove from heat and set aside.
  5. Assemble the Cheeseburger Bowls: In four separate bowls or meal prep containers, evenly distribute the romaine, pickles, tomatoes, onions, banana peppers, and grated cheddar cheese. Spoon about 2 tablespoons of the prepared mustard vinaigrette over each bowl and optionally toss to coat the salad ingredients. Top each bowl with cooked ground beef and crispy fries. Serve immediately for the best texture and flavor.
