Chicken:

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Bang Bang Sauce:

  • 1 ¼ cups (290 g) mayonnaise
  • ⅔ cup Thai sweet chili sauce
  • 2 teaspoons Sriracha, or more to taste
  • 2 tablespoons honey

Instructions

  1. Prepare Chicken: In a large bowl, combine the cubed chicken breasts with olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss well to ensure the chicken is evenly coated.
  2. Thread Skewers: Working one skewer at a time, carefully thread 4-5 chicken cubes onto each soaked wooden skewer.
  3. Make Bang Bang Sauce: In a small bowl, combine the mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Mix thoroughly until all ingredients are well incorporated. This will yield approximately 1 ¾ cups of Bang Bang sauce.
  4. Prepare for Cooking: Pour half of the prepared Bang Bang sauce into a separate bowl and set it aside to be used after the chicken is cooked. Use the remaining sauce to brush evenly over the chicken on the skewers.
  5. Air Fry Chicken: Place the prepared skewers in a single layer in your air fryer basket. Air fry at 400°F (200°C) for 11-12 minutes, flipping halfway. Cook until internal temperature reaches 165°F (74°C).
  6. Serve: Transfer the cooked skewers to a serving plate. Drizzle or brush generously with the reserved Bang Bang sauce. Serve immediately and enjoy!
