Marinade:
- 300 grams Chicken Thigh (fatty ones are best)
- 1 tbsp Honey
- 1 tbsp Light Soy Sauce
- 1 tbsp Oyster Sauce
- 1 tbsp Dark Soy Sauce (or Kecap Manis)
- 2 tbsps Brown Sugar
- 2 cloves Garlic, pureed or grated
- 1 inch Ginger, pureed or grated
- 1 tsp Chinese Five Spice powder
- Pinch of White Pepper
- 1 tsp Red Food Colouring (optional)
- Mix the marinade: Combine all marinade ingredients in a bowl or ziplock bag.
- Marinate the chicken: Add the chicken to the marinade and refrigerate for at least 2 hours or overnight.
- Preheat the oven: Remove the chicken from the fridge and let it come to room temperature. Preheat the oven to 200°C (390°F).
- Bake the chicken: Place the chicken on a baking tray and bake in the preheated oven for about 20 minutes until cooked through.
- Rest and serve: Allow the chicken to rest for 10 minutes before slicing and serving.
