Marinade:

  • 300 grams Chicken Thigh (fatty ones are best)
  • 1 tbsp Honey
  • 1 tbsp Light Soy Sauce
  • 1 tbsp Oyster Sauce
  • 1 tbsp Dark Soy Sauce (or Kecap Manis)
  • 2 tbsps Brown Sugar
  • 2 cloves Garlic, pureed or grated
  • 1 inch Ginger, pureed or grated
  • 1 tsp Chinese Five Spice powder
  • Pinch of White Pepper
  • 1 tsp Red Food Colouring (optional)

Instructions

  1. Mix the marinade: Combine all marinade ingredients in a bowl or ziplock bag.
  2. Marinate the chicken: Add the chicken to the marinade and refrigerate for at least 2 hours or overnight.
  3. Preheat the oven: Remove the chicken from the fridge and let it come to room temperature. Preheat the oven to 200°C (390°F).
  4. Bake the chicken: Place the chicken on a baking tray and bake in the preheated oven for about 20 minutes until cooked through.
  5. Rest and serve: Allow the chicken to rest for 10 minutes before slicing and serving.
