Instructions

  1. Prepare the cauliflower: Place 1 inch of water in a saucepan and add the cauliflower florets. Bring the water to a boil, then reduce heat to a simmer, cover, and cook the cauliflower until crisp-tender, about 5 to 10 minutes. Drain the cauliflower well to remove excess water.
  2. Preheat the oven: Set your oven to 325°F (163°C) to prepare for baking the casserole.
  3. Combine ingredients: In a large mixing bowl, combine the cooked cauliflower, sour cream, shredded cheddar cheese, crushed cornflakes, chopped green and red peppers, and salt. Mix thoroughly until all ingredients are evenly incorporated.
  4. Transfer to baking dish: Grease a 2-quart baking dish and spread the cauliflower mixture evenly inside. Sprinkle the grated Parmesan cheese over the top, followed by a light dusting of paprika to add color and flavor.
  5. Bake the casserole: Place the uncovered baking dish in the preheated oven and bake for 30 to 35 minutes, or until the casserole is heated through and the top is golden brown.
