Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350 degrees Fahrenheit. Lightly butter and flour a loaf pan to ensure the bread will release easily after baking. Set the prepared pan aside.
  2. Mix dry ingredients: In a large bowl, combine the all-purpose flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice. Whisk together until evenly mixed. Set this bowl aside.
  3. Combine wet ingredients: In a separate large bowl, stir together the grated carrots, eggs, vegetable oil, milk, and vanilla extract until well combined.
  4. Combine wet and dry mixtures: Add half of the flour mixture into the wet mixture and stir to combine. Then add the remaining flour mixture and continue mixing, scraping the sides of the bowl to make sure all ingredients are fully incorporated.
  5. Add walnuts: Fold in the chopped walnuts until they are evenly distributed throughout the batter.
  6. Transfer batter to pan: Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake the bread: Place the loaf pan in the center of the oven on the middle rack. Bake for 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
