Pasta:

  • 3 cups pasta, cooked

Chicken:

  • 1.5lb chicken thighs, boneless and skinless

Vegetables:

  • 1/2 cup celery, finely diced
  • 1/2 cup shredded carrots
  • 1/3 cup green onion

Dressing:

  • 2 tbsp plain greek yogurt
  • 4 tbsp buffalo sauce (2 tbsp for sauce and 2 for coating on chicken thighs)
  • 1/2 cup creamy ranch dressing
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder

Chicken Brine:

  • 1 tbsp salt
  • 1 tbsp sugar
  • 16oz water
  • 1 tbsp dried dill
  • 1 tbsp minced garlic

Instructions

  1. Prepare Chicken Brine: Heat 1/4 cup water with salt and sugar. Add remaining water to make 16oz. Cool, then add dill and garlic. Refrigerate for 1-2 hours.
  2. Cook Pasta: Cook according to package instructions. Set aside.
  3. Make Buffalo Dressing: Combine ranch dressing, 2 tbsp buffalo sauce, greek yogurt, salt, and garlic powder.
  4. Cook Chicken: Season chicken and cook in skillet until 165°F. Let cool, then coat with buffalo sauce.
  5. Assemble Salad: Mix pasta, celery, carrots, green onion, and dressing. Top with chicken.
  6. Enjoy!
