Tomato Bruschetta Topping:
- 6 Roma tomatoes (1 1/2 lbs, diced)
- 1/3 cup basil leaves (chopped)
- 5 garlic cloves (divided)
- 1 Tbsp balsamic vinegar
- 2 Tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Bruschetta Toasts:
- balsamic glaze ((optional))
- 1 baguette
- 3 Tbsp extra virgin olive oil
- 1/3 cup shredded parmesan cheese
- Make the Tomato Bruschetta Topping: Core and dice tomatoes. Drain excess juice and transfer to a bowl. Chop basil and garlic, mix with olive oil, balsamic vinegar, salt, and pepper. Marinate for 30 minutes.
- Make the Bruschetta Toasts: Preheat oven. Cut baguette into slices, brush with garlic-infused olive oil, sprinkle with parmesan. Bake and broil until golden brown.
- To Serve: Arrange toasts on a platter, top with tomato mixture. Drizzle with olive oil and balsamic glaze.
Notes
- For added flavor, you can rub the toasted bread with a cut garlic clove before adding the tomato mixture.
