A classic and flavorful Bruschetta recipe that features a fresh tomato topping with basil and garlic, served on crispy toasted baguette slices.

Tomato Bruschetta Topping:

  • 6 Roma tomatoes (1 1/2 lbs, diced)
  • 1/3 cup basil leaves (chopped)
  • 5 garlic cloves (divided)
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Bruschetta Toasts:

  • balsamic glaze ((optional))
  • 1 baguette
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Make the Tomato Bruschetta Topping: Core and dice tomatoes. Drain excess juice and transfer to a bowl. Chop basil and garlic, mix with olive oil, balsamic vinegar, salt, and pepper. Marinate for 30 minutes.
  2. Make the Bruschetta Toasts: Preheat oven. Cut baguette into slices, brush with garlic-infused olive oil, sprinkle with parmesan. Bake and broil until golden brown.
  3. To Serve: Arrange toasts on a platter, top with tomato mixture. Drizzle with olive oil and balsamic glaze.

Notes

  • For added flavor, you can rub the toasted bread with a cut garlic clove before adding the tomato mixture.
