A delightful twist on classic applesauce, this Blueberry Vanilla Applesauce is bursting with fruity flavors and a hint of warmth from vanilla. Perfect for snacking, topping yogurt, or accompanying pork dishes.

Ingredients

Scale

Applesauce:

  • 4 lb apples (peeled, quartered, and diced)
  • 3 c frozen wild blueberries
  • 1/4 c coconut sugar
  • 1/4 c water
  • 1 lemon zested and juiced (about 2 tbsp lemon juice)
  • 1 tsp vanilla
  • 1/4 tsp pink Himalayan sea salt

Instructions

  1. Prepare the apples: Peel, quarter, core, and dice the apples.
  2. Rinse the apples: Place diced apples in a colander and rinse under cold water.
  3. Cook the apples: In a pot, combine apples, blueberries, coconut sugar, water, lemon zest, lemon juice, vanilla, and salt. Heat until bubbling.
  4. Simmer: Cover and simmer on medium-low heat for 20-25 minutes until apples are soft.
  5. Puree: Remove lemon peels, then use an immersion blender to puree applesauce to desired consistency.
  6. Adjust consistency: Add water if too thick or simmer to thicken if too thin.
  7. Portion and store: Divide into jars, cool, and refrigerate, freeze, or can for long-term storage.

Notes

  • This applesauce can be customized with spices like cinnamon or nutmeg for extra flavor.
  • For a smoother texture, strain the pureed applesauce through a fine-mesh sieve.
  • Adjust sweetness by adding more or less coconut sugar according to taste.
