Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon salt

Blueberry Mixture:

  • ½ cup frozen blueberries

Cookie Dough:

  • ½ cup granulated sugar
  • 1 stick (1/2 cup) unsalted butter, softened
  • ¼ teaspoon vanilla extract
  • ½ cup white chocolate chips (optional)

  2. Prepare Dry Ingredients: In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  3. Prepare Blueberry Mixture: Microwave the frozen blueberries in a small bowl until soft. Mash with a fork to a jam-like consistency. Cool in the fridge if necessary.
  4. Make Cookie Dough: Cream together butter and sugar in a stand mixer. Add blueberry jam and vanilla. Mix well. Add the flour mixture and white chocolate chips.
  5. Form Cookies: Scoop rounded dough onto the baking sheet, flatten slightly, and bake for 10-12 minutes.
  6. Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can use fresh blueberries if preferred, adjusting the cooking time as needed.
  • For a more decadent treat, drizzle melted white chocolate over the cooled cookies.
