Main Ingredients
- 16 oz refried beans (can use canned beans)
- 3/4 cup plain Greek yogurt or sour cream
- 4 oz can diced mild green chiles, drained
- 1/4 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and black pepper, to taste
- 2 cups shredded cheddar or Mexican blend cheese, divided
Toppings
- Sliced green onion
- Chopped cilantro
- Chopped avocado
- Sliced jalapeños
- Chopped grape tomatoes
- Queso fresco
For Serving
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit. This ensures the dip will cook evenly and the cheese will melt perfectly.
- Mix Ingredients: In a large bowl, combine the refried beans, plain Greek yogurt, drained diced green chiles, salsa, chili powder, ground cumin, garlic powder, onion powder, paprika, salt, and black pepper. Stir well to blend all the flavors together. Then mix in 1 cup of the shredded cheese.
- Assemble & Bake: Spread the prepared bean mixture evenly into an 8×8-inch or 2-quart baking dish. Sprinkle the remaining 1 cup of shredded cheese evenly on top. Bake in the preheated oven for 20 to 25 minutes, or until the cheese is completely melted and bubbly. Remove from the oven carefully.
- Add Toppings & Serve: Once baked, top the dip with fresh sliced green onions, chopped cilantro, chopped avocado, sliced jalapeños, chopped grape tomatoes, and crumbled queso fresco for added freshness and texture. Serve the bean dip warm with tortilla chips for dipping.
Notes
- You can substitute sour cream for Greek yogurt if preferred, though Greek yogurt adds a healthier protein boost.
- Adjust the amount of chili powder and jalapeños based on your spice tolerance.
- For a smoother dip, you can blend the refried beans before mixing with other ingredients.
- This dip can be prepared ahead of time and baked right before serving.
- Vegetarian friendly; omit cheese or use vegan cheese for a vegan version.
