Instructions

  1. Sauté Aromatics: Heat the olive oil and butter in a large pot over medium-high heat. Add the chopped onion and garlic, cooking for about 2 minutes until softened and fragrant.
  2. Add Vegetables & Spices: Stir in all the chopped root vegetables along with the curry powder and dried thyme. Cook for about 3 minutes, stirring frequently to evenly coat the vegetables and develop flavor.
  3. Simmer: Pour in the water, then add kosher salt and black pepper. Increase heat to bring to a boil, then reduce to medium-high heat. Let the soup simmer uncovered for 15 minutes or until the vegetables are tender when pierced with a fork.
  4. Blend: Stir in the heavy cream and let the soup simmer for an additional minute. Remove the pot from heat and blend the soup until smooth using an immersion blender. Alternatively, carefully transfer the soup in batches to a countertop blender and purée until creamy.
