Marinade:

  • 5 lbs chicken drumsticks

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together the honey, soy sauce, orange juice, Dijon mustard, minced garlic, and grated ginger. Reserve 2/3 cup of the marinade for later use, then refrigerate it.
  2. Place the chicken drumsticks in a large Ziploc or food saver bag. Pour the remaining marinade over the chicken. Seal the bag, pressing out as much air as possible, and refrigerate for at least 6 hours or overnight. For best flavor, turn the bag a few times while marinating.
  3. Bake the Chicken: Preheat your oven to 400°F (200°C) and place the rack in the center. Line a rimmed baking sheet or large roasting pan with parchment paper. Arrange the marinated chicken drumsticks skin-side up, ensuring they are not touching each other. Add just enough marinade to coat the bottom of the baking pan (discard any remaining marinade in the bag). Bake at 400°F for 25 minutes. After 25 minutes, flip the chicken to skin-side down and continue baking for another 20 minutes. For crispy, caramelized skin, remove the chicken from the oven, flip it back to skin-side up, and broil on high for 3-4 minutes or until the skin is browned and crispy.
  4. Make the Glaze: While the chicken is baking, pour the reserved 2/3 cup marinade into a small saucepan. Bring it to a boil, then reduce the heat and simmer for 7 minutes or until it thickens into a syrupy consistency. Once the chicken is done, brush the thickened glaze over the drumsticks.
  5. Garnish: Garnish with sesame seeds and freshly chopped chives, if desired.
