These Baked Feta Potatoes are a delicious and easy-to-make dish that combines the creaminess of feta cheese with the crispy goodness of roasted potatoes. Perfect for a comforting meal or a side dish for any occasion.

Potatoes:

  • 2 large baking potatoes

Feta:

  • 1 200g block of feta

Seasonings:

  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes

Other:

  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup | 20g fresh basil

Instructions

  1. Preheat Oven: Preheat your oven to 200C | 390F.
  2. Prepare Potatoes: Wash and cube the potatoes. Par-boil the potatoes for 6-8 minutes, then drain and steam dry for 2-3 minutes.
  3. Season Potatoes: Toss the potatoes with thyme, oregano, salt, pepper, and olive oil. Roast for 30-40 minutes.
  4. Add Feta: Place feta in the middle of the tray and squeeze lemon over it.
  5. Prepare Garlic: Remove garlic, mash, and set aside. Continue baking for 15 minutes.
  6. Combine Ingredients: Mix garlic, lemon juice, and basil into the potatoes and feta.
  7. Final Touches: Drizzle with honey and more basil.
  8. Serve: Serve and enjoy!
