Ingredients

Scale

Fish

  • 1 1/4 pounds cod, cut into 4 fillets

Marinade

  • 1/4 cup olive oil
  • 2 teaspoons honey
  • 1 tablespoon soy sauce
  • 3/4 teaspoon lemon zest
  • 2 teaspoons chopped fresh parsley, plus more for garnish
  • 1 1/2 teaspoons fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon minced garlic

For Cooking and Garnish

  • Cooking spray
  • Lemon wedges and fresh herbs for garnish

Instructions

  1. Prepare the marinade: In a small bowl, whisk together olive oil, honey, soy sauce, lemon zest, chopped parsley, fresh thyme leaves, salt, pepper, and minced garlic until well combined.
  2. Marinate the fish: Place the cod fillets in the bowl with the marinade, spooning the mixture over to coat each piece evenly. Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to infuse, or up to 8 hours for deeper taste.
  3. Preheat oven and prepare dish: Preheat your oven to 400°F (200°C). Lightly coat a baking dish with cooking spray to prevent sticking.
  4. Bake the cod: Arrange the marinated cod fillets in the prepared dish. Spoon any remaining marinade over the top. Bake for 10 to 11 minutes, or until the fish becomes opaque and flakes easily with a fork, indicating it’s cooked through.
  5. Broil for finishing: Switch your oven to the broil setting. Place the baking dish under the broiler and broil the cod for 3 to 4 minutes until the edges are lightly browned, creating a beautiful finish.
  6. Serve: Remove from oven and serve immediately, garnished with fresh parsley and lemon wedges to enhance flavor and presentation.

Notes

  • Do not overcook the cod; it should be opaque and flake easily but remain moist.
  • Marinating times can vary; longer marination yields more pronounced flavors.
  • Use fresh herbs for best flavor—parsley and thyme complement the cod perfectly.
  • Cooking spray helps prevent sticking and makes cleanup easier.
  • Serve with steamed vegetables or a light salad for a complete meal.
