Cookie Dough:

  • 1/4 cup powdered sugar

  • 1 cup all-purpose flour
  • 1/3 cup finely ground almond flour

Finishing:

  • 1/4 cup apricot jam
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C) and line a cookie sheet with parchment paper.
  2. Mix Ingredients: In a large bowl, combine softened unsalted butter, powdered sugar, and vanilla. Mix until creamy. Then add in all-purpose flour, almond flour, and salt until dough comes together.
  3. Shape Dough: Shape the dough into 1 1/4-inch balls and place them on the cookie sheet about 1 inch apart. Press a thumb into the center of each ball to create indentations.
  4. Bake: Bake for 15 to 17 minutes, until set but not browned. Repress indentations if necessary.
  5. Finish: Let the cookies cool on a rack for 20 minutes then fill each thumbprint with apricot jam and dust with powdered sugar.
