Ingredients

Scale

For the Bread:

  • 1/2 cup (113g) unsalted butter, softened
  • 2/3 cup (133g) granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup (120ml) milk
  • 2 medium apples, peeled, cored & diced (mix of tart & sweet)
  • 1/3 cup (67g) brown sugar
  • 1 tsp ground cinnamon

For the Glaze:

  • 1/2 cup (60g) powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to prevent sticking and ensure easy removal.
  2. Make the Cinnamon-Apple Mixture: In a bowl, toss diced apples with brown sugar and ground cinnamon until evenly coated. Set this mixture aside to let the flavors meld.
  3. Prepare the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Beat in the eggs one at a time to incorporate, then add the vanilla extract and mix well.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder to distribute the leavening agent evenly. Gradually add these dry ingredients to the butter mixture, alternating with milk, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix for a tender crumb.
  5. Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Spoon half of the apple mixture evenly over the batter. Repeat with the remaining batter and apple mixture. Use a knife to lightly swirl the apples into the batter for a marbled apple-cinnamon effect.
  6. Bake: Bake the bread in the preheated oven for 50–55 minutes, or until a toothpick inserted into the center comes out clean, indicating that the bread is fully cooked.
  7. Cool: Allow the bread to cool in the pan for about 10 minutes before carefully transferring it to a wire rack to cool completely. This prevents sogginess and helps it firm up.
  8. Prepare and Add the Glaze: In a small bowl, whisk together powdered sugar, milk (start with 1 tablespoon and add more if needed), and vanilla extract until the glaze is smooth and pourable. Drizzle the glaze evenly over the cooled bread.
  9. Serve: Slice the bread and serve warm or at room temperature. Enjoy the soft, sweet, and warmly spiced flavors with each bite.

Notes

  • Use a combination of tart and sweet apples for a balanced flavor and varied texture.
  • Make sure butter is softened, not melted, for the best creaming results.
  • Do not overmix the batter to keep the bread light and tender.
  • Check for doneness by inserting a toothpick into the center; it should come out clean.
  • The glaze can be adjusted to your desired thickness by varying the milk amount.
  • Store leftovers wrapped tightly at room temperature for up to 2 days, or refrigerate for up to a week.
  • Reheat slices briefly in the microwave or toaster oven for a fresh-baked feel.
