Vegetable Filling

  • 3 tbsp coconut aminos (or soy sauce)
  • 1 tsp Chinese 5 spice
  • 1/2 tsp mild chili powder
  • 8 rice paper sheets (or 16 if using double layers)
  • 2 spring onions, sliced thinly

Peanut Dipping Sauce

  • 1/2 cup natural peanut butter (smooth or crunchy)
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1/2 tablespoon sesame oil
  • 2 teaspoons rice vinegar
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon garlic powder
  • 24 tablespoons water (to desired consistency)

Instructions

  1. Prep Vegetables: Thinly slice onions, carrots, zucchini, red bell pepper, cabbage, and spring onions as directed for the filling.
  2. Sauté Aromatics: Heat 1 tbsp sesame oil over medium-high heat in a pan. Sauté onions for 3 minutes, then add garlic, Chinese 5 spice, and chili powder, cooking for another 2 minutes.
  3. Cook Vegetables: Add carrots, zucchini, bell pepper, and coconut aminos. Cook for 10 minutes until softened. Then stir-fry in cabbage for 5 more minutes.
  4. Soften Rice Paper: Fill a large bowl with cold water. Submerge one rice paper sheet for 1-2 minutes until pliable, then place it on a plate.
  5. Fill and Fold Dumplings: Put a spoonful of the vegetable stir-fry in the middle of the softened rice paper, sprinkle with spring onions. Fold the edge closest to you up, fold one side over, then the other side, and roll tightly to form a dumpling. Ensure seam side is underneath.
  6. Repeat Wrapping: Continue softening rice papers and wrapping dumplings until all vegetable filling is used.
  7. Preheat Air Fryer: Set air fryer to 200°C (390°F) and preheat.
  8. Prepare Air Fryer Basket: Lightly brush basket with sesame oil to prevent sticking.
  9. Air Fry Dumplings: Place dumplings in a single layer in the basket and brush tops with sesame oil. Air fry for 10 minutes, flipping after 5 minutes for even crispiness.
  10. Alternate Pan Fry Option: Heat 1.5 tbsp sesame oil in a large skillet. Fry dumplings for 3-5 minutes per side until crisp and golden.
  11. Make Peanut Dipping Sauce: Combine peanut butter, soy sauce, maple syrup, sesame oil, rice vinegar, chili powder, ginger powder, and garlic powder in a bowl or food processor. Blend until smooth. Add water 1 tbsp at a time to reach desired consistency.
  12. Serve: Serve air-fried dumplings warm with the peanut dipping sauce. Garnish with toasted sesame seeds, fresh cilantro, crushed peanuts, or green onions if desired.
