Ingredients

Scale

Crust

  • 1 1/2 Tbsps (20g) salted butter, melted
  • 1/2 cup (56g) blanched almond flour
  • 3 Tbsps (24g) confectioners swerve
  • 1/2 Tsp (2g) vanilla extract
  • Pinch of cinnamon
  • Pinch of salt

Filling

  • 2 1/2 Tbsps (36g) salted butter
  • 3 Tbsps (36g) brown swerve
  • 1 Tsp 0 carb maple syrup (optional)
  • 1/4 cup (30g) pecans

Instructions

  1. Prepare the crust: In a medium bowl, combine the melted butter, almond flour, confectioners swerve, vanilla extract, cinnamon, and salt. Mix thoroughly until the mixture becomes crumbly, then use your hands to form it into a cohesive ball of dough.
  2. Form the crust shell: Spray a 4-inch bowl with baking spray. Place the dough ball inside and press it out evenly with your fingers to cover the bottom and extend halfway up the sides of the bowl to create a crust shell.
  3. Optional pre-bake the crust: Microwave the crust in 2-3 intervals of 30 seconds each to slightly set it. If microwaved, place the crust in the freezer to cool and firm up before adding the filling.
  4. Make the filling: In a small bowl, mix the butter, brown swerve, and optional 0 carb maple syrup. Microwave the mixture for about 30-45 seconds until the sweetener fully dissolves into the butter, then stir well.
  5. Assemble the pie: Sprinkle half of the pecans into the crust. Pour the prepared filling over the pecans. Top with the remaining pecans and gently press them into the filling to embed them.
  6. Serve or chill: Enjoy immediately or refrigerate the pie to allow the filling to set for a firmer texture before serving.

Notes

  • This recipe uses microwave cooking to speed up preparation but can be chilled instead of microwaved if preferred.
  • Using blanched almond flour keeps the crust smooth and delicate.
  • Optional 0 carb maple syrup can enhance the flavor but can be omitted to reduce carbs even further.
  • Ensure pecans are fresh to maximize flavor and texture.
  • Refrigerating the pie will improve the filling’s firmness and make slicing easier.
