  • 2 tsp paprika (divided)
  • 1 tsp cumin
  • ½ tsp black pepper
  • 1 tsp crushed red pepper flakes
  • ½ tsp coriander

Oils & Others

  • 2 tbsp olive oil (divided)
  • Salt to taste
  • Optional: freshly chopped herbs like cilantro or parsley

Instructions

  1. Cook the Turkey: In a medium pan, add the ground turkey with about ¼ cup water. Cover and cook over medium-high heat for 4-5 minutes until turkey is mostly cooked.
  2. Add Spices and Garlic: Remove lid, add turmeric, crushed red pepper flakes, black pepper, coriander, cumin, 1 tsp paprika, and 1 minced garlic clove. Stir well and cook uncovered for 2-3 minutes, allowing any excess water to evaporate and spices to bloom.
  3. Add Vegetables and Cauliflower Rice: Lower heat to medium. Stir in the chopped carrot and bell pepper. Then add cauliflower rice, 1 tbsp olive oil, the remaining 1 tsp paprika, and salt to taste. Mix thoroughly. Cover and cook for 3-4 minutes to let flavors meld and vegetables soften slightly.
  4. Finish with Jalapenos and Garlic: Remove lid again and stir in remaining 3 minced garlic cloves, pickled jalapenos, and remaining 1 tbsp olive oil. Cook and stir continuously for 2 more minutes to infuse flavors before serving.
