Instructions

  1. Prepare the sauce mixture: In a small bowl, combine the cream cheese, garlic, tomato paste, cumin, coriander, crushed red pepper, and a teaspoon of water. Stir until the mixture is smooth and well blended.
  2. Add the main ingredients: Mix in the shredded or chopped rotisserie chicken, chopped jalapeno, arugula, and your choice of basil leaves or dill into the creamy tomato mixture until evenly incorporated.
  3. Assemble the quesadillas: Spread half of the chicken mixture over one half of a flour tortilla. Sprinkle with shredded cheese, then fold the tortilla over to cover the filling. Repeat the process with the second tortilla.
  4. Cook the quesadillas: Heat a non-stick pan with a bit of olive oil over medium heat. Place the folded tortillas in the pan and toast until the bottom is golden brown and crispy, about 2-3 minutes. Flip and cook the other side until golden and the cheese has melted.
