Filling
- 1 cup shredded or chopped chicken (rotisserie or cooked)
- 2 Tbsp cream cheese
- 1 1/2 tbsp tomato paste
- 3 garlic cloves, minced
- 1/3 tsp cumin
- 1/3 tsp coriander
- 1/2 tsp crushed red pepper
- 1 jalapeno, chopped
- 1/2 cup chopped arugula
- handful basil leaves or chopped dill
Assembly
- 1/2 cup shredded cheese (mozzarella suggested)
- 2 flour tortillas
- Olive oil, for toasting
- Prepare the sauce mixture: In a small bowl, combine the cream cheese, garlic, tomato paste, cumin, coriander, crushed red pepper, and a teaspoon of water. Stir until the mixture is smooth and well blended.
- Add the main ingredients: Mix in the shredded or chopped rotisserie chicken, chopped jalapeno, arugula, and your choice of basil leaves or dill into the creamy tomato mixture until evenly incorporated.
- Assemble the quesadillas: Spread half of the chicken mixture over one half of a flour tortilla. Sprinkle with shredded cheese, then fold the tortilla over to cover the filling. Repeat the process with the second tortilla.
- Cook the quesadillas: Heat a non-stick pan with a bit of olive oil over medium heat. Place the folded tortillas in the pan and toast until the bottom is golden brown and crispy, about 2-3 minutes. Flip and cook the other side until golden and the cheese has melted.
- Serve: Remove from the pan and let cool slightly. Slice each quesadilla into 3-4 pieces and serve warm, optionally with guacamole or your favorite dipping sauce.
Notes
- You can use any type of shredded cheese you prefer, such as cheddar or Monterey Jack.
- Basil or dill can be substituted according to your taste preferences or availability.
- For a milder version, remove the seeds from the jalapeno before chopping.
- Leftover cooked chicken works perfectly to save time.
- Serve with sour cream, guacamole, or salsa for extra flavor.
